Wellness Recipe of the Week

 

Spicy Peanut Butter Tofu
When you nourish your body with pure energy, you transform from the inside out! This week’s recipe is courtesy of chef Juliette Snijders, currently onsite at evolation’s Santa Barbara teacher training.

Ingredients
1 block extra firm tofu (press to remove any access water if you have the time)
1 can coconut milk or yoghurt
4 table spoons of peanut butter
1 table spoon tamari (or soy)
1 table spoon of coconut sugar or brown sugar or honey (taste! You might want more sweetness)
1 onion chopped
3 gloves of garlic
Red chili fresh or dried, whatever you have

Optional Additions
Sugar snaps, carrots, spring onions chopped, haricot verts. Just take what you have and put it in the sauce before baking.

Directions
Preheat the over to 350 degrees. If you have time, drain the water from tofu and set aside. Take an oven proof dish and mix all of the remaining ingredients in it. Add additional red chili or coconut sugar to taste. Cube your tofu and add it to the sauce.

Bake for 30 minutes, serve with quinoa, or rice, or noodles.
